Coconut Buttermilk Pound Cake

With Creamy Coconut Frosting

Recipe:

CAKE

350 degree oven. Bake approximately 1 hour.

1 cup soft butter

2 cups sugar

3 eggs

1 tbsp. coconut extract

1 tsp. vanilla extract

3/4 cup sweetened shredded coconut

3 cups flour

1/2 tsp. salt

1 cup buttermilk.

(I make buttermilk with 1 cup milk and 2 tbsp. white vinegar. Let sit until it thickens)

Creamy Coconut Frosting:

1/2 cup butter

1/2 cup shortening

2 cups icing sugar

1 tbsp. coconut extract

1 tbsp. cream

Topping:

Shredded sweetened coconut
