Today is Saturday on a regular-nothing-is-happening weekend. I was supposed to be at a cute rental on the shores of Lake Huron, enjoying a ‘Girlfriend Getaway’ but sadly, it was postponed. This charming spot in Ontario was called ‘the prettiest town in Canada’ by Queen Elizabeth II. To mark my momentary disappointment this morning, I decided to bake. Having a reason to bake a cake is not needed. Cake is important. All. The. Time. This is why is shows up at every life event. Even on the days your plans get cancelled or shifted and you need cheering up!
I liken cake to receiving flowers.
Reasons why cake (flowers) is important:
1. There is nothing happier than receiving it.
2. It puts a smile on your face.
3. It brightens your mood.
4. Someone took time to make or purchase it for you. It says ‘I’m thinking of you.’
5. It celebrates a new life, another birthday, career, business, home or marriage.
6. It gives sweetness to a gathering or celebration.
7. It is a courteous way to show gratitude.
8. It is a expression of romance > You CAN give it to yourself too! (ahem)
9. It creates a joyful memory. (and dare I say, thousands of family snapshots!)
10. Food = Love (Flowers = Love)
I admit it. I’m staring at this cake and it has lifted my spirits. Imma gonna go now and grab a fork. Not even going to slice it. Going to dig right in. That’s how darn important it is to me.
Today’s cake is from The Pioneer Woman.
“Sigrid was one of my mom’s dearest friends and I remember every single bite of every single carrot cake she gifted us. You can make it as a sheet cake, a bundt, or a layer cake. Sigrid’s carrot cake, my friends, is moist. It’s flavorful. It’s basic and wholesome and natural. And if it’s in my house, it’s gone in two seconds.” - Ree Drummond
